please don't sent HTML emails to users whose mail clients

cannot display them. All I see is a chaotic tag soup ...

Unload mod_gzip and disable your mod_gzip configuration,
except for the "CustomLog" directive.
Then make this CustomLog" directive work.
Before that, every mod_gzip related debugging is useless.
